Whenever a food is eaten in an uncommon manner, the proper blessing on it is Shehakol. So, for example, if one eats plain flour, the blessing is Shehakol (Berachos 36a). Similarly, plain coffee beans are not commonly eaten, so the blessing on them is Shehakol. If they are coated in chocolate, then perhaps that is the common manner of eating them, in which case they would be ha'adamah. Reply

If I made a Boray Nefashot on the first drink, that means I was finished drinking, and I would need to make another Shehakol blessing before drinking anything again. If I am not done drinking, I should wait with the Boray Nefashot after-blessing so I should not have to make another blessing before drinking, we do not recite unnecessary blessings. Hashem is not a good replacement, as it doesn't mean G-d, rather it means "The Name" - in a blessing we need to mention G-d's actual name to be a valid blessing.
