Pesach Chocolate Mousse 
  • Divide 6 eggs
  • Melt 1/2 alprose choco bar
  • 1 cup sugar divided
  • Pinch salt
  1. Beat yolks with 3/4 cup sugar slowly add melted choc while constantly beating
  2. Whisk whites when frothy add salt and contact whipping until peaks form then slowly add 1/4 cup sugar while constantly whisking.
  3. Don't stop until peaks are very firm (you should be able to hold bowl upside down without anything falling out)
  4. Place in pans and cover well (so no freezer burn)
Miracle Bars
  • 2 cups ground almonds
  • 1 cup brown sugar/sugar/sugar syrup
  • 2 eggs
  1. Preheat oven to 375; Grease a 9x13 pan.
  2. Mix ingredients together and spread in pan with spatula. Batter will be thick but do not add water. Just mix it well.
  3. Bake for 23 minutes.
Fudge Brownies
  • 4 whole eggs
  • 1 ½ - 1 ¾ c. sugar
  • 1 c. oil
  • ½ c. cocoa
  • ¾ c. potato starch
  1. Lightly mix eggs.
  2. Add rest of ingredients until just smooth. Don’t overmix.
  3. Bake at 350 for 50 min in 9 by 13
Pesach Chocolate Cake
  • 7 eggs separated
  • 1 ½ c. sugar
  • ½ c. potato starch
  • ¾ c. cocoa
  1. Beat whites until stiff.
  2. Add 1 c. of sugar slowly. Beat yolks.
  3. Add ½ c. sugar, potato starch, and cocoa. 
  4. Add whites into yolk.
  5. Bake at 350.
  • 90g sugar (a bit less than 1/2 cup)
  • 100g almonds (a bit more than 3/4 cup)
  • 2 egg yolks
  1. Mix all ingredients together by hand and drop onto greased pan.
  2. Bake on 350 until golden around the edges.
  • 3 egg whites
  • 1 cup sugar
  • 3 cups crushed almonds
  1. Mix together, make into balls and bake on 180/350
  2. Dip bananas in melted chocolate and chopped nuts and freeze
  • 2 pkg ground nuts
  • 3/4 c sugar
  • 4 egg whites
  1. Mix. Shape. Spray cookie sheets.
  2. Bake @350 10 min.
  3. Drizzle with melted choco
Kiwi and Mango Sorbet
  • 6 eggs sep. whip whites with sugar
  • 2/3 cup sugar
  • 3 tbsp lemon juice mix yolks with lemon and oil
  • ¼ cup oil mix all together
  1. In food processor, 2 mangoes and 4 kiwis separately.
  2. Mix each kind of fruit with ½ batter.
  3. Spread in 9x13 pan – freeze bottom for 1 hour then add second layer.
Perfect Consistency Sorbet
  • 1 lb frozen fruit (freeze pineapple, mango etc)
  • ¾ cup of sugar
  • ¾ c. orange juice
  • A squeeze of lemon juice
  1. Puree kiwi, banana, mango, pineapple, apple, and some water (or any combo you want)
  2. Freeze in a lovely popsicle mold
Here is a recipe for ices with grape juice and lemon juice:
  • 3 cups grape juice
  • 1 cup sugar water or ½ c. sugar
  • 2 cups water
  • 3/4 cup lemon juice


  1. Freeze 
  2. when partially frozen process in food processor and re-freeze.
  • Avocado mango salad – avocado, mango, jicama, red onion, lemon or lime, salt- can chunk or do sticks piled up on each plate.
  • Romaine salad – orange segments, grapefruit segments, pear and/or apple slices, avocado, papaya, mango, nuts, lemon, salt, toasted nuts
  • Chatzilim - Broil or grill eggplants, chop onions and tomatoes and small chunks of avocado and salt and mix in.
  • Cucumber salad- lemon, salt, bit of red onion sliced very thinly – cut cucumbers by hand because processor slices too thinly.
  • Israeli salad – cucumber , tomato, onion
  1. mix lemon juice,  olive oil,  salt - if you like you can add a bit of horseradish for some kick
  2. also squeeze fresh orange with the above dressing blend liquid sugar red onion salt n a mango
(2) Mango Sauce
  1. mix 1/2 mango, 1/2 cup lemon juice, 1/8 purple onion, 1/2 cup oil 1/2 tsp salt, 1/2 cup sugar
  • Tastes great drizzled over salmon
(3) Avocado dressing made the same way as the mango above. Just switch mango for avocado.

Potato Kugel
Usually do this 4 times
5 lbs potatoes
5 eggs
5 onions
1 c. Oil
(Amts I use for 1-2 pans of kugel: 10 potatoes,  3 onions, 5 eggs, 1 c. oil, 2 heaping Tbsp salt, 1 tsp pepper)
Covered for 2 hrs
Uncoverd for an hr or two
Amazing apple kugel - always a huge hit:
Pesach apple kugel
Yields: 9X13
7 Apples, grated
1 C. Sugar
3 Tbsp. Lemon Juice
1/2 C. Potato Starch
1/4-1/2 C. Oil
5 Eggs, separated
drop Cinnamon optional
drop Vanilla extract optional
Mix egg yolks with 1/2 cup sugar, lemon juice, potato starch and oil (add cin. and vanilla if using). Beat egg whites with other 1/2 cup sugar. Pour yolk mixture into whites slowly. Add grated apples until just mixed.
Pour into 9X13 and bake at 350 for 1 hour. Freezes really well.
Note: This is a really airy apple kugel - also it will fill to the top of the 9X13.
Sweet Potato Kugel
5 lbs shredded yam
3 onions
1 c. oil
1 Tbsp salt
1 tsp pepper
5 eggs
(do less than 4 pans)
  Yam kugel
We make ours savory
(And I freeze raw any kugels I want for the last days)
Measurements are approximate season to taste and the add the eggs.  Or make and the cook a "little latke" to test taste  
5 lbs Yams - cooked
2-3 cups of Fried onions 
1.5/2 tablespoons salt
10-12 Eggs
Immersion blend it all together
Sweet potato pie
3-4 lg sw potatos boiled and mashed, 4 eggs, ½ cp orange juice, 3 T salt, some water.   Bake 425 uncovered.
Delicious pineapple kugel
1/2 large pineapple crushed
1 cup sugar
1 cup crushed almonds
1/4 cup oil
6 eggs. 
Pour into a pan just smaller than 9x13. Bake 180'/350' for one hour.
Sauce: Process (don’t over process) tomatoe and  pineapple with saut’eed onion and add salt (could add some water).  In the meat - process sautéed onion and some raw onion, add eggs and salt and just a bit of mashed potato.  When sauce boils drop them in. can do the same with minced chicken ( I used too much mashed pot and the balls were so soft and fell apart)
Stuffed Chicken Steaks
8 chicken steaks
500 gms of veal mince or dark chicken mince
1 carrot grated
1 zucchini grated
1 onion minced (if you have time fry the onions but works well anyway:))
1 egg
1 small sweet potato grated
2 oranges
mix mince with vegetables and egg till combined
Lay out the chicken steaks and divide the mince mixture between all the chicken. form a mini loaf and roll shut, place chicken seam side down in baking pan. Any extra mince mixture can be made into meat balls and put around the chicken in the pan. Squeeze oranges liberally onto the chicken and bake uncovered at 180 degrees till nicely browned at least 1 1/2 hours.
Fry 3-4 onions til brown. Brown brisket on both sides on top of onions. Pour a bottle of sweet red wine over and add water to almost cover. Bring the heat down and bake for 2 hours.
Chicken with grated veggie crumbs
Line pan with sliced onions, thin slices of sweet potato and potato. Top with regular cut up chicken. Season with salt
Sprinkle home made vegetable crumbs across chicken
(2 grated carrots, 1 medium sweet potato and 3 zucchinis – all grated in food processor)
Drizzle 3 teaspoons of wine, 3 teaspoons of orange juice, 3 teaspoons of oil. Bake covered for an hour on 400, another hour on 325, and then uncover and broil for 5 minutes.
Chicken cutlets
This recipe is for 4 packages of chicken cutlets
4 large potatoes
16 eggs
4 Tbsp salt
Blend in food processor. Coat chicken cutlets in mixture. Fry on stove top in oil
Chicken Recipes:
· 1 roaster cut in 8
fry up 1 large onion until brownish, add tomato puree (about 1c maybe less) and salt. If you use ground chilli add some and add a bit of sugar. Pour over the chicken and bake 1.5-2 hrs covered and half hr uncovered. Baste to get it really brown.
· Sweet and Sour sauce : ½ cup red cooking wine, ¼ cup sugar, 1 cup orange juice. Bring to a boil, and pour over chicken nuggets, or use as a dipping sauce.
·       Hawaiian – onion, carrots sliced, pineapple cubed, shredded tomatoes, lemon & orange squeezed, water , salt
·       Peel and process a pineapple and pour it on top of the chicken.  1 large pineapple is enough for 2 trays.  This is heaven! Also made it with pieces of pineapple put in between chicken
·       Add cubed pineapple and sweet potato OR sweet potato at bottom of chicken and pour freshly squeezed orange juice on top.
·       Add lots of grapefruit juice, a little orange juice, sautéed onions and salt – (Rochi)
·       Onions, wine, salt
·       Squeeze one orange and 1/2 a lemon per chicken - this is a great sweet and sour.
·       Put all root vegetables under or in between chicken (carrots, parsnips, sweet potatoe,  etc)
·       Pour some lemon on chicken and grill/broil for 20 minutes. Then put in a pan with sautéed onion, zucchini and carrot.  Pour wine on top and bake. Really good – as it has that ‘grilled’ flavour
·       Onions, carrots, salt
·       Sliced onions 4, 2 Mangoes, 2 kiwis, Salt, Bake chicken together, When done, blend mango, onion and kiwi for delicious gravy and put over chicken.
Marinated Chicken
2 chickens, quartered
1/2 cup wine
juice of 2 oranges
juice of 2 lemons
2 tablespoons olive oil
2-3 large onions, sliced
10 potatoes, halved
Clean chickens and place in large pot, upside down. Mix wine and juice and pour over chickens. Cover and marinate in refrigerator overnight.
Remove chicken from pot. Pour juice into container and set aside.
Coat bottom of Dutch oven with olive oil. Add layer of sliced onions and potatoes. Top with chicken. Pour half of marinade over chicken. Cook over low flame, checking frequently and adding water as necessary, to prevent sticking.
Mix remaining marinade with 1/2 cup water and pour over chicken ten minutes before end of cooking. May also be baked in oven following the above instructions, at 350° for 1 1/2 hours. Serves 6-8.
Shnitzel Recipes
·       Schnitzel – Process 4 potatoe, 1 large onion, 3 eggs, 1 tsp salt.  Dip schnitzel in to mixture and fry quickly on both sides (schnitzel will still be raw).  Put in tray as you take them out of the pan. Bake in oven for 20-25 minutes uncovered on high.  . I prepared it in trays and then heated up just before serving. Marinate in schnitzel in wine first.
·      Schnitzel- marinade shnitzels in wine.  Thinly slice onions. Just b4 serving put a little shmaltz in pan and gently fry shnitzels (with cover on pan)
·      Schnitzel – leftover chrein, wine, salt, onions
·      Schnitzel – Dip schnitzel into mashed sweet potato mixed with eggs and crushed pineapple.  Then brush egg over it and dip into crushed nuts. Bake 1 hr and slice to serve.  (Goldie)
·       Chicken patties – Hand shred chicken bottoms and mix with sautéed onions, eggs, salt – Do not overbake.
·       Pecan Shnitzel dip shnitzel in egg and crushed pecans and fry - delish!
Cholent on the stove top
5lb bag of potatoes grated
5 eggs beaten
1 large onion grated
beef cubes from any type of meat good in cholent
1/2 cup of oil 
2 tsp salt 
Mix all ingredients together and place in a crockpot on high for three hours and then on low overnight.
This cholent is like a big potato kugel with chunks of meat. It is so delicious, that people come to my kitchen to scrape the pot clean!
If your doing it on the stove top: Use a pot that has a non stick lining or a pot that doesn't burn easily. This Cholent tends to brown on the bottom and you don't want it to burn. Add a bit of water in all cases and don't cook well before hand. I didn't measure out 5 pounds of potatoes so I don't know if my 1/2 cup of water would work exactly. You want there to be enough water to prevent a burn but not enough to cover the cholent.
 Shepards Pie
Saute 1 Onion
 Saute 2 lbs meat with it Pour off fat
Add 2 eggs
5 big Mashed potatoesP
Sauté onions
2 eggs
Bake uncoverd for 1 hr.
· Mango sauce: 1/2 mango, 1/2 cup lemon juice, 1/8 purple onion, 1/2 cup oil 1/2 tsp salt, 1/2 cup sugar 
Blend all ingredients. Tastes great drizzled over salmon
Salmon with Pineapple-Grapfruit Salsa
10 5oz salmon fillets, skin off
2 Tb lemon juice
3 Tb olive oil
1 Tb salt
1 pineapple, peeled and diced small
2 grapefruits, cut into segments
1 small red onion, diced small
2 Tb grapefruit juice
¼ tsp salt
Place salmon on a baking sheet. Season with lemon juice, olive oil and salt. Bake in a pre-heated 350° oven for about 10-15 minutes.
While salmon is baking, combine remaining ingredients in a mixing bowl and stir well.
To serve, top salmon with salsa.
Delicious pickled salmon recipe
2 L water
3 T salt
2-3 cups tomatoe purée ( peel and purée tomatoes)
1/2 cup lemon juice
Lots of sugar
Sliced onion
Peeled carrots
Salmon or ocean trout
Boil up all ingredients then add fish. Simmer on low u til cooked through. Store in liquid.
5 lbs ground fish (white,pike,carp,dory choose and mix)
8 eggs
11/2 cups sugar
4 teaspoons salt
1 large grated onion
mix everything except the salt on medium speed for 15 minutes. add salt and mix another 5 minutes
if you want a rich broth get the fish shop to give you some fish bones. put into pot add 4 carrots, 2 onions, 2 tablespoons salt, 10 tablespoons sugar. fill with water and bring to a boil. let boil for 20 minutes.
wet your hands and form medium sized balls and drop into the water. let water come back up to a boil. then put on med low heat and let cook for an hour and half partially covered.
this makes approximately 40 balls
another option is to make loaves in baking paper. you can freeze it raw and cook it the way you would do a regular frozen loaf.
this is so delicious i just might make it for shabbos!!
Brisket recipe for seder:
4 pounds 2nd cut brisket
5 plum tomatoes
1 Spanish onion
1 pineapple, peeled and sliced into rings
½ cup sugar or 1 cup simple syrup
3 tablespoons shredded horseradish (skip if for first days)
1 Sweet onion
* Pour sugar or simple syrup on pineapples and refrigerate for a few hours or overnight to create sweet pineapple juice
* Peel tomatoes
* Sauté onions until lightly browned in saucepan
* Add tomatoes
* Add pineapple juice and 3 pineapple rings
* Reserve rest of pineapple rings to serve with roast
* Simmer ingredients
* Add horseradish
* Puree and add ¼ cup chicken stock or water
* Sear meat for 4 minutes on each side in oiled large frying pan (optional)
* Slice sweet onion and place in baking pan
*Place meat on top of onions
* Pour sauce on top of meat
* Cover baking pan well with silver foil
* Bake for 3 hours at 350f
* Let roast cool. When cool slice against grain
* Heat sauce in sauce pan and simmer for 10 minutes (optional)
* Pour over brisket slices and place in oven to warm for 15 minutes
* Place pineapple rings under broiler for 5 minutes until it becomes slightly browned. Serve with roast (optional)
